Last week I had some weird virus that didn’t leave me with a whole lot of symptoms, but I was just BEYOND exhausted. You know when celebrities get hospitalized for “exhaustion”? That’s where I was. I actually felt VERY glam about it.
But my exhaustion was not caused by a liquor and cocaine bender – I think I just had a lame virus.
I don’t like to cook anyway but when I’m sick I pretty much just want gluten-free chicken nuggets, chicken soup, and noodles. But UGH you gotta get those nutrients in. So a 10-second healthy meal is the only option. And that’s why I made this.
And I’ve been eating it non-stop for the last week. SO GOOD.
But you don’t have to be sick to make this, obviously. Because let’s be real – I am NOT that original in the kitchen and this kind of shit is my go-to. It still baffles me that I started a recipe blog.
I feel like this No Recipe-Recipes series is so lame, but sometimes you just need a little inspiration to get you going, ya know? And let’s be real here – sometimes we just wanna be lame in the kitchen and focus on other fun things like Netflix, going to the dog park, doing a face mask, or taking your family out for ice cream.
This is really the whole reason I started The Nutrition Addiction. I’m obsessed with all things wellness and health – especially nutrition. Nutrition is everything, guys. It affects our sleep, mood, energy, weight, sex drive (yep), hormones – your whole life.
BUT. BIG BUT. It’s gotta be easy, or those of us who have better things to do other than think about what to make for dinner all day are just not gonna do it. And I’ve pretty much mastered that craft.
So back to this Ground Beef Stir-Fry. I’m a big fan of just throwing a few things into a pan vs ordering takeout all the time because:
a) I like to know what’s in my food.
b) I’m way less bloated when I eat at home.
c) I’d rather take two seconds to scramble something up and keep my hot bod than drown it in udon noodles.
OH AND – I started buying the GIANT bag of stir-fry veggies from Costco and they are BOMB. They’re loaded with different veggies (lots of broccoli – my fav) and I just pick out the nasty ass mushrooms for both Winifred and I.
Your PHFF stats:
PROTEIN: Ground beef
HEALTHY FAT: Ground beef! But it’s much, much healthier fat if you use grass-fed. If you don’t buy grass fed, go for a leaner grade of beef. Also, a touch a parm.
FIBER-RICH CARBS: Allllll the veggies!
- 1 lb ground beef (preferably grass-fed)
- 8 c frozen stir-fry vegetables
- ¼ c parmesan
- Seasonings: salt, pepper, granulated garlic and onion
- Brown your meat while you thaw the veggies in the microwave.
- Season your meat how you like it - I sprinkle it with tons of salt, pepper, and granulated garlic and onion
- Add your veggies, stir and season a little more.
- Add a handful of parm - you're done!
